I like to taste different meals when I travel and I remember when I was in Niger that very often was used "gombo". Can you tell me what is it exactly ? I think it is a vegetable but I amn't very sure.

Mamouzel, your braised fish sounds delicious. I wonder what sort of fish you use for that dish. If the "attiéké" is like couscous, mmmm, Í'm sure I'd love it!
I like cooking tuna or salmon steaks , coley fish, and occasionally a trout. You can't go wrong and it doesn't need preparing for hours!
Thinking about it, what I most enjoy doing is preparing soup in very large quantities (the excess goes in the freezer!)... My pleasure starts at the farm shop where I can get “organically grown” vegetables. They look beautiful, colourful, they smell fresh and delicious. I love creating soups according to what I can get hold of. There isn't a strict recipe to follow, as long as you know a few basic principles, so, that sort of preparation is always very relaxing... I love using herbs and spices too.
I do hardly any baking...

I am very pleased that my fish recipe have retained your attention, thanks you very much for this sympathy. Of course you can use all kind of fish you like. Here in ivory coast we prefer carpus, gold fish, "st Pierre" (is a kind of fish flattened in his two sides) i don't know the name in english. Could you help me please.
You keep it kicking his heels,then you dress the fish at your taste ( with the spices, parsley, herbs and so on...) few minutes later you can braise them. i think you can find "attiéké" in African restaurant in Europe. It's delicious indeed.

Thank you so much Mamouzel for opening our horizon and let us share your joy of cooking. I'll look for attiéké (your cassava couscous) in some specialised shops.
As for fish, I think what you call carpus must be "carp", but, I don't know about your gold fish, st pierre..?.. (here, a goldfish is the little "poisson rouge" you put in a small aquarium...). I wonder whether the fish you mentioned for braising would be: halibut? Perhaps someone else knows...and will come with ideas.
Lovely to cook with herbs and spices isn't it?

I enjoy cooking too. I particularly like making experiments.
One example : I've brought back my father's garden a lot of figs. So, I have prepared some recipes as figs cooked in the horn with honey and cinnamon, cake with figs (clafoutis). I have to say that the cake wasn't very tasty...
All I've got to do now is preparing some ice with figs, because I have frozen the last ones.
I hope this last experiment will be at last a real success !

Yes, I like cooking. It's a beautiful hobby. Me I like cooking because I am in Hotel management in Trois-Rivières and I have a Cooking class. So, I make a beautiful cake, main course, salads and other. it's a beautiful job in cooking. I practise my English on the site I talk and write in French at Trois-rivières
