Hi, dakir.
Yes, "he and "she" can be used when we know the gender of the animal(male or female). The two pronouns are commonly used when we talk about "pets",(animaux familiers).
But there's certainly a lot to say about this question.

Hello Dakir,
As a rule, in English:
> males are a he
> females are a she
> and everything else (including most animals) is an it.
But a rule always has to be broken; here are some ‘exceptions’:
1) Cars and ships are often referred to as she (ex: This car is beautiful and she’s fast too!’)
2) If you are emotionally attached to your animals, or ‘pets’ as Aimen7 mentioned, you can call them a he or she… Also, to mark the gender of an animal, you can add she- or he- before its noun (ex: a she-cat, a he-goat...don't forget the hyphen)…Thus, a horse can be a she, he or it BUT a hen would be a she and a rooster can only be a he (I’ve learned it from the motion picture “Chicken Run!”)
3) Human babies can be named as it (if we aren’t quite sure about the sex and although it may sound a little weird to French speakers. ex: Look at the baby! It’s walking!)
